Piloncillo has been around for at least 500 years, and is a raw form of pure cane sugar that is commonly used in Mexican cooking and is sometimes referred to as Mexican brown sugar. It has a deep golden brown color, and a deliciously rich, caramel-like flavor similar to molasses.

The crystallized final product (it is similar in texture to brown sugar) is the result of a long process of selection, drying, purification, squeezing, cooking and grinding. Delicious and aromatic.
